After eating meat or fowl, one must wait six hours before consuming dairy products. The rabbis concluded that it takes a full six hours for meat to be completely digested, and for all traces of the meat to dislodge from between the teeth.

After ingesting dairy it is permitted to eat immediately as long as the person washes his or her hands and rinses his mouth well. The common custom, however is to wait half an hour or an hour after eating dairy.1

After eating certain cheeses, such as aged or fine Swiss cheeses, one must wait six hours before eating meat or fowl.

One must also recite the appropriate after-blessing on the dairy product before (reciting the blessing for, and) consuming a meat dish -- and vice versa too.
