I'm trying to become completely kosher, but what if I slip?

Is it a sin to slip up and make a mistake? We are only human and we all make mistakes. G-d understands that and that is why He devised a system of repentance for when we make mistakes so that He could forgive us and so that we can forgive ourselves.

The bottom line is we shouldn't live in fear of our mistakes and shouldn't allow our mistakes to rule our lives. We should live in accordance with our goals and aspirations, and if a mistake does occur we deal with it, move on, and learn from the experience.

That being said, I would still like to point out that Kosher is one Mitzvah wherein it pays to be extra meticulous. “We are what we eat.” The food which we eat becomes integrated into our bodies, becoming part and parcel of our flesh and blood. We can repent for a slip-up and our merciful G-d will surly forgive us—but the spiritually unhealthy foods have already become part of our body.

Mitzvah
(pl. Mitzvot). A commandment from G-d. Mitzvah also means a connection, for a Jew connects with G–d through fulfilling His commandments.
Kosher
Literally means "fit." Commonly used to describe foods which are permitted by Jewish dietary laws, but is also used to describe religious articles (such as a Torah scroll or Sukkah) which meet the requirements of Jewish law.
G-d
It is forbidden to erase or deface the name of G-d. It is therefore customary to insert a dash in middle of G-d's name, allowing us to erase or discard the paper it is written on if necessary.
